Recipe :

Gond ke laddu
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 18-20

Ingredients:
1 cup/ 200g gond
3 cups/ 375g whole wheat flour
3 tbsp/ 40g besan
1 1/2 / 200g cup powdered sugar
1 cup mixed dry fruits
¼ cup grated coconut
½ cup makhana
¾ -1 cup ghee
1 tsp dry ginger powder

Method:
Heat 1 tbsp ghee in a pan. fry the dry fruits till golden and remove. Roast the grated coconut in the same pan and remove when slightly coloured. Roast the makhana in the same pan for 3-4 minutes over low heat. Remove. Grind all the dry fruits to a coarse powder.
Heat 4 tbsp ghee in the pan.
Fry the gond in medium hot ghee till it puffs up. Fry in 4 batches.
Remove from the pan. crush the gond with a rolling pin or a potato masher.
Heat 1 ½ tbsp ghee. Add the besan and sauté till lightly coloured and fragrant. Remove.
Heat ¼ cup ghee in a pan. Add the atta to the pan and sauté till the atta is also fragrant and lightly coloured.
Remove from heat. Mix in the dry ginger powder. Add all the other ingredients and the powdered sugar and mix well. Shape into laddus.
Cool the laddus completely and store in airtight container.
Note: you may add more melted ghee if it is difficult to bind the laddus.
