About Gond ;
Obtained from Acacia species of plants mainly babool or keekar. Latin name: Acacia nilotica. it is also called edible gum, acacia gum, dink, gaund, goond etc. Its prakriti or property is hot, meaning, it provides heat/warmth to the body & hence mostly consumed in winter. When soaked in water it dissolves on its own and when fried in hot oil it puffs up like popcorn. Some of the preparations using gond are gond ke laddoo, panjeeri & gond chikki. Gond is always fried in desi ghee/clarified butter before using. Some of the health benefits of Gond are : Provides energy, gond ke ladoo & panjeeri are given to pregnant women & those breastfeeding, as it increases breast milk, provides strength and nourishment being rich in calcium & protein, helps them & those recovering from illness recover faster. About Gond Katira;
Obtained from the roots & stems of the shrub Astralagus gummifer. also called Tragacanth, Tragacanth gum, katira, katira gond, katila, etc. Its prakriti or property is cold, meaning, it provides coolness to the body and reduces body heat, hence consumed in summer only. When soaked in water it does not dissolve like gond does but absorbs water & swells/fluffs up to many times its original size. It is mostly consumed as a beverage either sweet or salty, like gond katira sharbat but you can also add it to yogurt, lassi, custard, and jelly and consume it. Gond Katira is always soaked in water for a few hours until it becomes jelly-like and then used. Drink it in the morning. Some of the benefits of Gond Katira are : Gives relief from summer heat & distress, prevents summer nose bleed & heat stroke. Keeps the digestive system healthy & relieves constipation
