It doesn’t matter what time of year it is, Anzac Cookies are always a favourite in our house. Anzacs are traditionally an Australian and New Zealand cookie associated with World War 1. Known for storing well and staying fresh for long periods when women sent them to their loved ones by naval transport. This recipe makes 20 cookies.
Simple ingredients and a simple recipe to follow.
Ingredients
1 1/4 cups of plain flour
1 cup rolled oats
1/2 cup castor sugar (I accidentally refer to it as coconut in my video 🤣)
3/4 cup desiccated coconut
2 tablespoons of Golden Syrup
1/2 teaspoon Bicarbonate soda
1 1/2 tablespoons water
150 grams of butter
Combine the first 4 dry ingredients in a bowl and mix together by hand.
In a saucepan, melt the golden syrup and butter, stirring constantly.
In a small bowl, combine the bicarbonate soda and water and mix together. Add to the melted butter/golden syrup mix and remove from heat as it froths up.
Now add to the dry ingredients and use your hand or a spatula to mix together. Roll into balls and flatten slightly.
Place in a fan forced oven at 170 degrees and bake for 10-12 minutes.
Cook for longer if you prefer crunchy cookies.
