These delicious ANZAC biscuits have a very special meaning to the people of Australia and New Zealand. ANZAC stands for the Australian and New Zealand Army Corps, which fought together during WWI (perhaps most notably the battle of Gallipoli in 1915).

ANZAC Day is an annual day of remembrance, commemorating all those who served and died for Australia and New Zealand (similar in spirit to Memorial Day in the United States).

These ANZAC biscuits were baked by the women left behind, waiting for their soldiers to come home. They were inexpensive to make and stood up the journey when shipped overseas to those husbands and lovers.

Ingredients:
1 cup rolled oats
1 cup all-purpose flour
1 cup firmly packed light brown sugar
1/2 shredded or flaked coconut
9 TBSP salted butter
2 TBSP golden syrup or dark corn syrup
1 TBSP water
1/2 TSP baking soda

Method:
Preheat oven to 325ΒΊF/160ΒΊC
Combine oats, flour, sugar and coconut in a large bowl.
In a small saucepan, melt butter and syrup, combined with water, over low heat, until smooth.
Stir in baking soda.
Stir butter mixture into dry ingredients.
Drop level teaspoons of biscuit dough onto a greased or parchment-lined baking sheet, about 2 inches apart, flattening them slightly.
Bake for 20 minutes.
Cool on a wire rack.
