A kadhi recipe that does not use yoghurt! This is a Sindhi Kadhi recipe!
This Kadhi recipe is unique because unlike other kadhis which have a base made of yoghurt and besan, Sindhi Kadhi is a kadhi that is made with besan but no yoghurt.
Sindhi kadhi also does not have any pakoras added to it but vegetables are added to it instead.
The tartness in the Sindhi Kadhi comes from the addition of tomato paste and imli pulp to it.
This Sindhi Kadhi is served with Rice and meethi boondi in many Sindhi families.

Sindhi Kadhi
Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 5-6

Ingredients:
4 tbsp oil
½ tsp cumin seeds
½ tsp mustard seeds
½ tsp fenugreek seeds
Pinch of Asafoetida
8 tbsp besan
1 sprig curry leaves
1 tsp turmeric powder
1 tsp kashmiri chili powder
2 tsp chopped ginger
1 tsp chopped green chilies
Salt to taste
2 large potatoes
2 drum sticks
5-6 beans
2 aubergines
6-7 lady fingers
¼ cup tamarind pulp
3 large tomatoes, pureed
1 tsp jaggery powder

Method:
Dice the potatoes, aubergines. Cut beans, drum sticks and lady fingers in 2” pieces.
Heat oil in a pan.
Lightly fry the ladyfingers and remove and then fry the aubergines.
To the hot oil, add the asafoetida, cumin, mustard and fenugreek seeds. Allow to splutter.
Now add the gram flour, stir & cook over low flame until the gram flour turns golden in colour. Make sure you keep stirring continuously.
Now add curry leaves, once they crackle add 2 cups water & stir continuously.
Now add 6 cups water, salt, turmeric powder, kashmiri red chilli powder, ginger, green chilli, tomato puree, stir well & bring the kadhi to a boil. Allow to simmer for 4-5 minutes and add in the drumstick, beans & potatoes, cover & cook the kadhi for 10 mins over medium low flame.
Add the fried lady finger & brinjals, stir well & continue to cook it for 10 more minutes.
Add tamarind pulp, stir well.
Adjust the seasoning and serve.
