Cauliflower is a vegetable from the cabbage family that provides many health benefits. It is typically planted in the spring and takes about 50 to 100 days to harvest and produces 1 head per plant.
1 cup of raw cauliflower provides about 25 calories, 5.3 grams of carbohydrates, 0.1 grams of fat, 2 grams of protein, 2.5 grams of fiber and less than 3 grams of sugar.
Cauliflower has a robust micronutrient profile, as it is extremely high in vitamin C, which plays an important role as an antioxidant and promotes skin, bone and ligament health, vitamin k, which can help against blood clotting and improve bone health, vitamin b6, which can help brain function, and benefits the nervous and immune systems, folate, which is important for healthy cell growth, and potassium, which benefits nerves, muscles and cells.
Cauliflower also contains antioxidants that can help to protect cells and compounds that are believed to reduce inflammation and protect against cancer. And, for a vegetable, cauliflower does contain a higher amount of protein, which helps in muscle growth, and helps build and repair tissues in the body.
