Brussels sprouts are a great, highly nutrient dense vegetable. Brussel sprouts are grown from seeds, and they actually grow along the stalk of the plant. It typically takes 80 to 100 days for Brussel sprouts to be ready for harvesting after planting.
A 1 cup, 88 gram serving of raw brussels sprouts provides about 38 calories, less than a gram of fat, 8 grams of carbohydrates, 3 grams of protein and 3.3 grams of fiber. Brussels sprouts have a great micronutrient profile, as they are high in vitamin A, vitamin C, vitamin K, vitamin B6, folate, potassium, and manganese.
Brussels sprouts also contain phytonutrients and antioxidants that help to protect cells from harmful free radicals and help to promote your immune system. Their high vitamin C and K content can aid your body in healing and strengthening bones. Brussels sprouts are also high in fiber, which can help improve gut health, bowel health, lower cholesterol levels, aid in weight control and in removing toxins from the body, and for a vegetable, they have a higher protein content, which can help in muscle growth and repair.
Brussels sprouts are also rather inexpensive at about $3 per pound or for 16 ounces, which equates to about 60 cents for a 1 cup serving.
And brussels sprouts can be roasted, broiled or sautéed and served as a side dish, added to pasta, as part of a vegetable plate, or even steamed and lightly seasoned, or chopped and added to a salad.
Bottom line is that Brussels sprouts are a great, nutrient dense, healthy food with links to gut health, and antioxidant benefits. And it can also be satisfying to know that you are consuming something created completely through nature.
