This vibrant dish, bursting with an array of veggies, reminds me of my amazing neighbor, who was Sindhi aunty and I used to take her delicious tiffins for six wonderful years. Every lunch and dinner was an adventure of rich flavors, and you can only imagine how many times I savored that comforting Sindhi Kadi! DO SHARE IN COMMENTS how you make Sindhi Kadi at your home. Method : Cut some veggies beforehand (1 Potato, cut into cubes, 7-8 florets of Cauliflower, 5-6 Okra, crowns removed, 7-8 Cluster Beans, cut into halves, 1 Drumstick, cut into 5-6 pieces) Further heat 1 tbs Oil in a pan Add 1 tsp Mustard Seeds Add 1/2 tsp Fenugreek Seeds Add 1 tsp Cumin Seeds Add a pinch of Asafoetida Powder Add a little chopped Ginger Add 2 tbs Gram Flour & fry well until it’s light golden-brown Add 1/2 tsp Turmeric Powder Add 1 tsp Red Chilli Powder Add 1 tsp Coriander Powder Add few Curry Leaves Add Salt as per taste Add puree of 4 medium size Tomatoes Gradually add Water and keep stirring Add potato cubes and drumstick Cook up to 3-4 boils on medium heat On the other side, heat 2 tsp Oil in a pan Add Cauliflower, Cluster Beans & Okra Toss until it’s half done Add these veggies into kadhi and leave it to simmer (At this stage you can also add tadka on the kadhi) Add 1/2 tbs Tamarind Pulp & mix it Turn off the heat and add chopped Coriander Take this kadhi in a serving bowl Enjoy this Delicious Sindhi Kadhi with Rice .
