No-Bake Biscoff Truffles for a Midday Treat ๐Ÿช

Ingredients

- 250g biscoff biscuits/cookies (32 biscuits)
- 125g biscoff spread/cookie butter
- 120g cream cheese
- 1/2 tsp vanilla extract
- Pinch of salt (optional)

Biscoff Truffle Coating:

- 200g chocolate
- 1 tbsp coconut oil

Method

STEP 1 Start by adding your Biscoff biscuits into the Cordless Mini Prep Pro and blitz until you have fine crumbs (fine crumbs will make the truffles smoother.).

STEP 2 Take one tbsp of crumbs out and set aside.

STEP 3 Add in the cream cheese, Biscoff spread, vanilla, and salt and blend until fully combined.

STEP 4 Take a tbsp and mould them into 18 โ€“ 20 even balls.

STEP 5 Place them onto a tray and into the fridge for an hour, or the freezer for 30 mins.

STEP 6 In a microwave-safe bowl, melt chocolate chips and coconut oil in the microwave in 20-second increments until melted.

STEP 7 Use a large fork to scoop each truffle and dip it into the melted chocolate. Tap the fork gently against the side of the bowl so that any extra chocolate drips back into the bowl then place each truffle back on the parchment-lined baking sheet.

STEP 8 Drizzle any extra chocolate on top and sprinkle with the Biscoff crumbs.

STEP 9 Place back into the fridge until fully hardened, about 30 minutes.
