Defending on track is all about making an overtake trickier for the car behind without messing up your own flow too much, otherwise you'll be under attack coming out of a corner. 'Holding the middle' is the most basic and safe defense you can do. It won't always put people off, but it will help you deflect a lot of potential overtakes from even happening to begin with and keep your position on track.
