Sega wat
5 small or 3 large red onions, chopped
6 cloves of garlic
1 thumb of ginger
2tbs water
3 tbs berebere
3tbs Niter Kibeh (can substitute for ghee or butter, but add an extra tsp of berbere)
1.5 lbs beef
Boiled eggs
Iniera
Cook red onions over low heat for about an hour or until caramelized, stirring frequently.
Blend garlic and ginger with water to form a paste. Add to the caramelized onions and cook for about two minutes.
Add beef, stir. Add berbere and niter kibeh, stir. Allow to cook for about 3 minutes. Add water, cover, increase heat to high. Bring to boil then reduce eat back to low and allow to simmer for 3-4 hours.
Boil eggs when the Sega wat is nearly done. Peel the eggs and add them to the Sega wat. Gently stir. Serve with injera.


Note* I used a tough cut of beef. More tender cuts can cook for less time.
