✨Recipe:
Ingredients:
Prismatic Noodles:
• 2 ½ tbsp mung bean starch
• ¾ cup water, divided
• Gel food coloring of choice
Cheese Sauce:
• 2 tbsp salted butter
• ¼ cup heavy cream
• 1 cup cheese, finely shredded (mozzarella and parmesan blend)
• 1 tsp cracked black pepper
• ½ tsp salt
Directions:
1. In a small bowl, whisk the mung bean starch with ¼ cup cold water until completely smooth.
2. Heat the remaining ½ cup water in a small saucepan until just below a simmer. While stirring constantly, slowly pour in the starch mixture. Add a small amount of food coloring and continue stirring until the mixture thickens and turns glossy and translucent.
3. Transfer the mixture to a piping bag or pasta extruder and pipe directly into a bowl of ice water to set. Once firm, cut into noodle-length pieces and set aside.
4. Repeat steps 1–3 with any other colors you are using.
5. In a small saucepan over low heat, melt the butter. Slowly add the heavy cream and heat until just warm, not boiling.
6. Add the cheese in small handfuls, stirring constantly until fully melted and smooth. Season with cracked pepper and salt.
7. Gently spoon the cheese sauce over the translucent noodles and serve immediately for a shimmering, prismatic mac-and-cheese experience! 🌈
