this is episode 9, where will be taking a trip to Iran, to make some Kuku Sabzi, also known as a Persian herb omelette ๐ฎ๐ท

Servings (4)
8 free range eggs
1 tsp ground ginger
1 tsp ground turmeric
1 tbsp black pepper
2 tsp salt
2 tbsp barberries
2 tbsp chopped walnuts
4 stems of spring onion (green part only), finely diced
50g dill finely chopped
100g fresh coriander finely chopped
100g fresh parsley, finely chopped
15 sprigs of fresh thyme, finely chopped
1 tbsp extra virgin olive oil
1, 1/2 tbsp whole milk
1/2 tbsp saffron water
To serve:
Chopped walnuts
Barberries
Step (1)
In a large bowl, crack 8 eggs and whisk until combined. Season with ginger, turmeric, black pepper, salt, barberries and walnuts, then mix very well.
Step (2)
Finely dice the spring onion, dill, coriander, parsley and thyme. Add to another bowl, then add 1 tbsp of olive oil, mix well. Now add to the egg mixture and combine well.
Step (3)
Heat up a non stick pan on a medium low heat, add some olive oil. Gently pour the egg mixture into the pan, cook for 10 minutes, then check the bottom has cooked, then carefully flip and cook the other side. Once fully cooked, serve with some chopped walnuts and barberries. Enjoy :)
