One of the authentic Gilani dishes is KuKu Badoobeh, which has been a tradition for a long time, prepared at celebrations and weddings, often served alongside Zereshk Polo with Chiken.
This dish is so versatile that you can serve it as dinner or lunch with bread.
I made this Kuku using the traditional method "Sar Tash Bon Tash", where you apply heat from both top and bottom using hot coals to thoroughly cook the Kuku. This method imparts a subtle, pleasant smoky flavor to the dish.
🔴Ingredients for 4 people:
3 Potatoes
3 Medium Onions
1 Chicken Breast
6 Eggs
1 Tablespoon Tomato Paste
2 Tablespoons Fresh Lemon Juice
3 Tablespoons Brew Saffron
1 Tablespoon Baking Powder
Salt, Black Pepper Powder, Cinnamon Powder and Turmeric Powder as needed.
