Curry leaf is a key ingredient in tempering that comes from the curry tree which is native to the Indian subcontinent. curry leaves are an essential ingredient for making tempering in Indian cooking. It can easily be found in Indian grocery stores. Their use is indispensable in several dishes. They are used not only in the main course and side dishes but they are also used while making several snacks.
Making tempering or tadka is very simple. Heat oil, and add mustard seeds, cumin seeds, asafoetida (hing), green chilies, and curry leaves to hot oil. Add this tempering to different dal, Subji or chutney to make them more flavourful.
Procedure:
1, remove the curry leaves from stem
2, wash them properly
3, use salad spinner to remove water completely
4, spread the curry leaves on clean kitchen towel and let them dry completely
5, once dry, refrigerate in glass container with kitchen towel on the top and bottom (Whenever you notice moisture droplets inside the container, wipe them away and change the paper towel, to ensure the leaves stay fresh for as long as possible)
6, the curry leaves will lasts for uptown ~20 days
