About this video
(28 Nov 1995) English/Nat
Hong Kong's chefs have been demonstrating their skills, but with one ingredient only - ice.
They were taking part in the 21st annual ice carving competition organised by the Hong Kong Tourist association and the Hong Kong Hotel Association.
Hotel chefs demonstrated their skills and artistry with the ice, transforming it into fascinating sculptures.
Ice-carving may not be very common in Hong Kong's subtropical climate, but hundreds of people came to see the exquisite sculptures at the Conventional and Exhibition Centre.
Many culinary students, Miss Hong Kong 1995, as well as Japanese beauty queens looked on.
The theme of this year's ice sculpting competition was to identify Hong Kong in a symbolic and dynamic way.
Dragons, birds and boats were the most popular figures for sculptures.
Their art however is more fleeting than most - the ice quickly begins to melt.
The contestants had to begin their work on the sculptures the night before.
Judges were very impressed with this year's entries.
SOUNDBITE:
For sculptures, you are looking for 3 dimensional quality. How the carver makes use of the medium especially ice which will be melting and brittle. And also for sculptor quality you are not only looking for one sided views, you have to walk around the sculpture and see how the artist manipulates the 3 dimensional space.

The winner was number 12, entitled LEGEND from the Island Shangri-la hotel.
The 11 other contestants won Bronze and Silver awards, but only one contestant captured the championship Gold prize.
The winning ice-sculpting team will be representing Hong Kong in Sapporo, Japan at their Snow Festival early next year.
