Ingredients:
1 package of filo pastry (about 12-15 sheets)
500g spinach (fresh or frozen)
200g feta cheese (crumbled)
100g ricotta cheese
1 onion (finely chopped)
2 garlic cloves (minced)
1 egg (beaten)
2 tbsp olive oil
Salt and pepper to taste
100g melted butter or olive oil (for brushing the pastry)
Instructions:
1. Prepare the Filling:
Heat olive oil in a pan, sauté the chopped onion until translucent.
Add minced garlic and cook for another minute.
Add spinach, cook until wilted if fresh, or until thawed if using frozen spinach. Remove from heat and allow to cool.
In a bowl, mix the spinach with crumbled feta, ricotta, and the beaten egg. Season with salt and pepper to taste.
2. Prepare the Filo Sheets:
Preheat your oven to 180°C (350°F).
Take a sheet of filo pastry and brush it with melted butter or olive oil.
Add another sheet on top and brush again. Repeat this for 3-4 sheets depending on how crispy you want it to be.
3. Add the Filling:
Place a portion of the filling along the edge of the filo stack and carefully roll it up like a cigar.
Fold the edges in to prevent the filling from spilling out.
4. Bake:
Place the filled filo rolls onto a greased baking tray.
Brush the tops with more melted butter or oil.
Bake for about 25-30 minutes, or until golden and crispy.
5. Serve:
Let it cool slightly before serving. You can pair it with a side of yogurt or a fresh salad.
