Servings: 8-10
▢ 9-inch vegan & gluten free pie crust + lattice dough pieces
▢ 12 oz fresh cranberries
▢ 3/4 organic sugar
▢ Zest of 1 orange
▢ 1/4 cup cornstarch
▢ 10 oz frozen dark cherries, thawed
1. Preheat oven to 400F.
2. In a large pan, add cranberries and sugar. Mix to combine. On a medium heat, let cook until cranberries are semi-soft and juicy.
3. In a small bowl, add cornstarch and some juice from thawed frozen cherries. Mix until cornstarch is a loose liquid with no lumps. Add back to frozen cherries and stir well.
4. Add this to cranberries along with zest and combine. Bring to a boil then simmer for 3-4 minutes or until liquid has thickened.
5. Let cool to room temp. Add to pie base. Cover pie with lattice pieces or a top pie crust. If using a top pie crust, make sure to add few incisions in crust.
6. Bake for 40-45 mins or until golden brown. Remove and let cool completely, about 3 hrs. Preferably, wrap and let cool overnight in fridge.
7. Slice and serve with a scoop of vanilla ice cream.
