About this video
I've never had anything like this dish before, it's so intersting to eat a stew and dough like this. It feels like a similar concept to fufu but the dough is much firmer and a completely different process to make. Thank you @nhmajri for helping me with this recipe
Ingredients
about 1/2 kilo lamb meat (preferably shoulder and leg of lamb)
1/2 large chopped onion (a full one if you like more onion)
1/4 cup olive oil
1.5 tbsp tomato paste
1/2 tbsp fenugreek
1/2 tbsp tumeric
1/2 tbsp red chilli
1/2 tbsp black pepper
1/2 tbsp salt
1/2 large garlic clove (if you like more garlic add as you please - just like the onion)
1 chopped fresh green chilli
2-3 medium potatoes peeled and halved
for the dough
1/2 kg barley flour
1/8 kilo plain / wheat flour
1/2 tbspoon salt
about 3/4 litre boiling water ( more as needed )
instructions for stew part:
1. pull out a big pot and start at medium heat, get your olive oil on there and when it heats up, add the fenugreek, onions, & chilli until the onion starts to go soft or until fragrant.
2. add the meat to the pot as well as your other spices and mix.
3. add chopped garlic
4. add tomato paste and mix well
5. add about 1/4 of boiling water
6. cook on low heat for about 15 minutes
7. add rest of the water & cook on medium heat for 45 minutes
8. add potato halves & cook on low heat till easy to cut through with fork, firm not mushy
9. boil 2-3 hard boiled eggs (outside of the sauce)
